It was an interesting read! Beef jerky indeed contains lots of protein that digests slower than carbs and therefore, one feels full for a longer period. Also, beef jerky has low carbohydrates which makes it ideal for low-carb and paleo diets. Low-carb diets are more helpful than low-fat alternatives to lose weight in the short term. On the other hand, a paleo diet can help maintain a healthy weight or lose 1-2 pounds every week.

I was so disappointed to read that beef jerky does not produce insulin. I was looking to give some relief to my beta cells in my pancreas. So disappointed 🙁
